Food Recipes you can make with Ceylon Tea
Ceylon tea can be consumed just in the form of tea, or even more. There are various types of food made using Ceylon Tea which brings a different type of texture and flavor to your cooking whether it is soft puddings, buttery cookies, stir-fries or meat dishes.
Wondering how to eat more tea? Here’s how;
1. Tea in a Stir-fry
Ceylon Green Tea is a great way to flavor anything from seared green, quick-fried root vegetables and meats. The grounded tea gets roasted as soon as they hit the pan while giving out a heartier, savory and an herbal flavor to the stir-fry.
a) Ceylon tea prawns
Ingredients

- 12 medium prawns
- 1 sprig curry leaves
- 1 clove garlic
- 1 green chili
- 1 hot red chili
- 1 x 2 cm piece ginger (chopped)
- onions, roughly chopped
Instructions
Wash the prawns and keep the prawn flesh to one side.
In a large pot of water, approximately 2 liters place the prawn shells, curry leaves, garlic, chilies, ginger, and onions. Bring to boil. Then simmer for 15 minutes.
Then take a separate pot and heat the oil and add the curry leaves, garlic, onion, and spices.
Fry until fragrant and then add to the prawn stock. Increase the heat and then reduce to a simmer, stirring occasionally. Cook for a maximum of 20 minutes.
In the pot which was used to fry the spices, heat some more oil in it. Don’t wash the pot out.
Add the carrot, eggplant, tomato, and onion one after and another. Then gently fry for 4-5 minutes. Add the curry leaves and stir to combine.
Meanwhile, prepare the prawns. Take out each prawn and put it on its back and lightly score its belly two or three times so that it can lie out flat. Place a skewer in each prawn. Start from the head and coming out at the tail. Remove the small spike which can be seen between the two tail fins. Do the same with remaining prawns and leave to one side.
Remove the curry from the heat. Then strain into the vegetable mixture. Bring to the boil and season to taste. Then add the lime juice.
Then in a separate dish, place the mayonnaise, garlic, red chili and parsley and stir to combine. Keep it aside.
Add the tea to a small pan and keep it over high heat. Let it be lightly roast. Be careful not to burn it. Next, remove it from heat and add a small amount to the mayonnaise mixture. Reserve the rest for garnishing.
Heat some oil on a hotplate. Then put the prawns on the hotplate and cook until just translucent.
Remove the prawns one after another from the heat and coat in the mayonnaise mixture. Now you may sprinkle over the prawns with a pinch of the leftover tea. Now you can serve with a small bowl of the prawn soup.
2. Rub It with Tea
Ceylon Black Tea like Ceylon Souchong with the usual rub ingredients like salt, garlic powder, pepper and brown sugar for quick-cooking meats like flank or skirt steak as well as in poultry, helps to create a ‘whoa’ moment by inducing a cooked over campfire scent and flavor.
a) Tea-Rubbed Filet Mignon Steaks with Buttery Mushrooms
- 2 teaspoons (about 2 tea bags) Earl Grey tea leaves
- 1 teaspoon black peppercorns
- 1 teaspoon dried tarragon
- 1 teaspoon kosher salt
- ½ teaspoon dried thyme
- 3 tablespoons extra-virgin olive oil
3. Marinade with Tea
Don’t throw away what you just of your breakfast tea or afternoon tea. You can now try using it as a marinade for chicken or duck meats add a grassy and smoky flavor. Vegetarian? No problem try marinating tofu with tea for the same effect and flavor.
a) Tea Marinade
Ingredients
- 1 1/2 cups cooked black or green tea
- 2 teaspoons stone-ground mustard
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh marjoram, roughly chopped
- 1 tablespoon fresh oregano, roughly chopped
- 2 tablespoons extra virgin olive oil
Preparation
Whisk the tea with both mustards, marjoram, and oregano together in a bowl. Then go to whisking in the olive oil until the marinade has the consistency of a very loose vinaigrette.
Put the red meat in a large, wide dish or zip-top bag and marinate in the refrigerator for up to 24 hours.
Take out the meat from the marinade. Then lightly pat dry with paper towels. You may now discard the marinade. Grill the meat to your preference and taste it to its bits.
