Manufacturing lowland Ruhuna traditional tea requires heavy rolling to break down sap-filled leaf cells and coat the exterior of the leaf with sap. This creates a glossy, jet-black appearance when dry.
Fermentation is carried out at warm ambient temperatures for 60 to 75 minutes, allowing full caramelization of natural sugars before the leaf is fired in high-temperature dryers.
